Fiery Ginger Cordial


The past couple of weeks in London have been notably colder, and in a effort to fight off the colds and flus that seem to come with the change of season, we made a monster batch of fiery ginger cordial. If you're on a budget this Christmas season, we think a nice glass flask of this stuff would make a really nice gift too...
Add a good glug to a mug of boiling water, or drizzle a little over your icecream or granola.

Makes 1L of cordial — Cooking time 40 minutes

 

Ingredients
4 big pieces of ginger (roughly 500g)

400g caster sugar

One small red chilli, sliced lengthwise

Zest and juice of two lemons

1 litre of water

 

 

Blitz the ginger (skin on) in your vitamix or food processor. 

Put in a pot and add the sugar, water, lemon zest and chilli. Simmer on a low-medium heat for 20 minutes. 

Remove from the heat, add the lemon juice and leave to cool. When cool, pour through a fine sieve into bottles and discard the ginger.
