Izaak's Vanilla Extract

A while back our friend Izaak came over and baked a cake for us. Watching him work, I noticed his bottle of home-made vanilla extract, such a super simple thing to make at home (and unusually expensive to buy premade). Here's how you do it.

Don't discard vanilla pods that have been scraped of their seeds - put them in a bottle and immerse in cheap vodka. Leave for at least a few days, although after a week it will have that nice golden brown tint. 

Whether you replace it when it gets low or top it up, this process is hard to mess up. Use for baking with or making compotes.
